Strawberry Citrus Ice Cream

Ingredients
1 cup fresh squeezed orange juice
2 cups frozen strawberries
1 large frozen sliced banana
1 tsp vanilla extract
1 tbsp coconut nectar or sweetener of your choice (optional)
1 tbsp cold-pressed coconut oil
Dash of salt
Ice water, as needed, to keep blender moving
Instructions
Place ingredients (except water) in your high speed blender and blend until smooth.
Add water, as needed, to keep the mixture moving in the blender.
Serve immediately.

Here’s an easy way to make your own frozen fruit:
The next time you find a good price on organic berries, buy some extra. Or, consider picking berries at a U-Pick Farm.
Wash and slice berries as desired. Lay them in a single layer on a cookie sheet or a dehydrator tray and put them in the freezer. Once they are frozen. Put them in a plastic bag for easy use in your recipes.
I also often buy an extra bunch of bananas for the freezer. Let them get very ripe, then peel them. Place each one in a zip top bag and freeze. That way, if I run out of fresh bananas I can add a frozen one to my smoothies, not to mention making ice cream.
